Celebrated at its Michelin-starred Dubai establishment, this innovative multi-course tasting menu enriches the Mumbai outlet’s culinary journey, which began in April 2023.
The Creative Roots of RASAS
Curated by Chef Rahul Rana and Chef Sanket Joshi, the 16 course RASAS menu offers an immersive exploration of the six fundamental tastes—or “RASAS”—that form the foundation of Indian cuisine: sweet, sour, salty, bitter, pungent, and astringent. Each dish is a modern reinterpretation of these flavors, seamlessly blending tradition and innovation.
Months of meticulous research have gone into crafting this menu, with chefs drawing inspiration from ancient culinary practices while tailoring dishes to reflect Indian diversity. Notably, the menu excludes onion, garlic, mushrooms, and paneer, challenging conventional perceptions of vegetarian food while delivering an exceptional dining experience.

Each course in the RASAS menu is crafted with precision, using humble seasonal ingredients to showcase the endless possibilities of vegetarian cuisine:
- Madhura (Sweet): Makhan Malai, popping sugar, saffron.
- Lavana (Salty): Braised red beet, ghee roast ketchup, appalam.
- Amla (Sour): Butternut dhokla, black lime pickle, fafda.
- Tikta (Bitter): Bitter gourd cafreal, sweet potato, raw mango curry.
- Katu (Pungent): Sago wada, charred pepper, peanut relish.
- Kashaya (Astringent): Sarson saag, corn ghewar, pickled radish.
