Chef Vikas Khanna Discusses Cookware Evolution in Bergner India’s New Podcast, BergCast

Mumbai, 7th October 2024Bergner India has launched BergCast, a new podcast series designed to delve into the world of food, cooking, cookware, and mindful living. In its debut episode, the podcast features none other than Michelin-starred chef Vikas Khanna, who shares his insights on the evolution of cookware and the importance of making conscious choices in the kitchen.

Reflecting on how cookware has changed over the years, Chef Vikas Khanna highlighted a shift in awareness about healthier cooking methods. He explained that for decades, aluminium cookware was commonly used in households, but advancements in technology have prompted a reevaluation of its safety. “For centuries, we thought aluminium was fine,” Chef Vikas Khanna said. “But with new technology, we now understand the potential harm it can cause to our bodies.” He pointed out that while people have begun seeking organic food, the same care should extend to the cookware that touches the ingredients. “The contact between the fire and the ingredients happens through the cookware, and that’s where the real magic—and sometimes harm—occurs.”

Chef also emphasised the need for home cooks to upgrade their cookware, recounting a personal story of trying to convince his mother to replace her old aluminium pans. “I see the wear and tear on her old cookware—the exposed layers, the dents—but she insists, ‘It’s still good.’ We need to educate the older generation, and as kids, it’s our responsibility to bring healthier, more sustainable cookware into our homes.”

The conversation highlights the shift towards tri-ply and other advanced materials that not only ensure a safer cooking experience but also preserve the authentic flavours of the ingredients. Chef Vikas remarked, “We’ve worked so hard to make our chicken organic, our vegetables pure, but at the end of the day, they’re all in contact with the cookware. The right tools make all the difference.”
