Mumbai, 21st August 2024: Peninsula Hospitality recently introduced a taste of Hawaiian culture to Mumbai with the launch of Waikiki, a contemporary dining experience and tiki bar. The menu was initially crafted by Executive Chef David Cagle, a seasoned professional with 28 years of experience in the hospitality industry, who began his journey with the Peninsula Group in March 2023. Now, Waikiki is set to elevate its culinary offerings with the appointment of Harpreet Singh Bhatti as its Head Chef. With over a decade of culinary expertise, Chef Harpreet brings a visionary approach to the kitchen, characterized by innovation and a passion for refined cuisine.

Chef Harpreet began his career training at the Taj Mahal Palace in Mumbai, at Wasabi by Chef Morimoto restaurant. where he honed his culinary skills under the guidance of Japanese chefs, including Masaki Kobayashi-san—his time at the Taj played a significant role in shaping his expertise and approach to crafting cuisine. where he gained comprehensive knowledge across various hospitality departments. At Waikiki, he is dedicated to crafting dishes that embody the vibrant spirit of aloha. His culinary philosophy combines Japanese and Hawaiian cuisines, creating unique fusions such as Robatoyaki—a complete charcoal grilling technique. At Waikiki, Chef Harpreet is all set to incorporate both traditional flavors and modern techniques, ensuring the dining experience is unique and memorable.
