Mumbai, November 2024 — Ishaara proudly presents Swaad by Ishaara, a one-of-a-kind dining pop-up curated by celebrated culinary expert Rushina Munshaw Ghildiyal, dedicated to exploring the vast tapestry of Indian flavors. This inaugural experience, Swaad: A Journey Through Taste, invites diners to embark on a sensory adventure through India’s rich culinary traditions, meticulously crafted to revive and celebrate the heritage of regional ingredients and flavors.

The 7-Course Swaad Experience is designed to engage all the senses, with each course capturing a unique taste profile that connects the ancient roots of Indian cuisine to its modern-day expressions. Diners can expect an immersive experience that dives deep into India’s culinary past, reviving forgotten flavors and showcasing regional ingredients in a new light.

The menu begins with Katu (Bitter/Astringent), a course dedicated to the rhizome family, featuring a Gujarati Osaman that highlights turmeric, ginger, and mango ginger. The journey continues with Namak (Salt), a dish that honors salt’s versatility, spotlighting Patra Shaka, Australian Salt Bush, and Uttarakhand’s prized Pisyoon Loon. Moving on to Khatai (Sour), this course brings a tangy profile to the table with Gondhoraj lime, Australian lemon myrtle, and the zest of Finger Lime dukkah.

Mirch (Spice) transports guests through India’s history with spices, featuring elements like Pipali, Naga chili, and Australian Mountain Pepperberry. The Tadka course celebrates the traditional Indian art of tempering, infusing the air with aromas of Pahadi-style wild tubers. In Svada, diners will experience heritage recipes inspired by ancient texts, including Black Moong Dal, the legendary Mansodan biryani, and Takra. The meal concludes with Sugandha (Sweet), a delightful finale of toasted puffed rice, paan leaves, and vanilla-infused cream paired with Bengali gur patasha.

Each course serves as a tribute to India’s farmers, producers, and ecosystems, and every dish narrates a story that brings the cultural significance of these ingredients to the forefront
